Ingredients

  • 200g quick-cook spaghetti (7 oz)
  • 1 tsp (5 ml) vegetable oil
  • 1 garlic clove, crushed
  • 150ml heavy cream (2/3 cup)
  • 2 eggs, beaten
  • 3 tbsp (45 ml) freshly grated Parmesan
  • 120g pack smoked salmon trimmings (4.2 oz)
  • 1/2 small bunch chives, snipped


Instructions

  1. Prepare the spaghetti according to package instructions. While the pasta is cooking, heat the vegetable oil in a small saucepan, then add the crushed garlic and cook gently for 1 minute. Take the pan off the heat.
  2. In a bowl, combine the heavy cream, beaten eggs, sautéed garlic, and half of the grated Parmesan. Mix in the smoked salmon pieces.
  3. Once the pasta is cooked, drain it thoroughly and place it back in the pot. Pour in the salmon mixture and add the chopped chives, then mix everything together, allowing the warmth from the pasta to slightly thicken the sauce.
  4. Serve the dish topped with the remaining Parmesan and a generous amount of freshly ground black pepper.
