Description

Discover how to make a hearty Slow Cooker Cowboy Casserole that’s packed with flavor and perfect for busy weeknights. Try this easy recipe today!

Ingredients

  • 1 pound lean ground beef (450 g)
  • 1/2 cup onions, chopped (120 ml)
  • 2 garlic cloves, pressed
  • 1 can cream of mushroom soup
  • 1 cup milk (240 ml)
  • 4 cups (960 ml) sliced potatoes (about 4 medium potatoes)
  • 2 cups cheddar cheese, shredded and divided (200 g)
  • salt and pepper to taste

Instructions

  1. Collect all necessary items.
  2. In a pan over medium heat, cook the lean beef and chopped onions until the meat is no longer pink and the onions are tender and see-through, approximately 6 to 7 minutes. Incorporate the pressed garlic and sauté until its aroma is released, around 1 minute. Add salt and pepper for flavor.
  3. In a separate bowl, mix together the cream of mushroom soup and milk.
  4. Line the slow cooker with a liner. Arrange a layer of potato slices at the bottom, overlapping them slightly. Sprinkle with salt and pepper. Add a layer of the cooked beef, a layer of the soup and milk blend, and 1 cup of shredded cheddar cheese. Repeat these layers with the remaining ingredients.
  5. Set the slow cooker to High and cook until the potatoes are easily pierced with a fork, approximately 3 to 4 hours.

Notes

  • For a healthier twist, opt for lean ground turkey instead of beef.
  • Enhance the dish with a layer of thinly sliced zucchini or carrots for extra veggies.
  • Switch up the flavor by trying different cheeses like mozzarella or pepper jack, and consider adding a sprinkle of paprika or dried herbs for more taste.
