Ingredients

  • 450 g shrimp, peeled and deveined
  • 450 g white fish fillets, such as cod or haddock, cut into chunks
  • 2 tbsp (30 ml) vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 720 ml seafood or vegetable stock
  • 240 ml coconut cream
  • 2 tbsp (30 ml) all-purpose flour
  • 1 tsp (5 ml) salt
  • 1/2 tsp (3 ml) black pepper
  • 1/4 tsp (1 ml) paprika (optional)
  • 1 bay leaf
  • 2 tbsp (30 ml) fresh parsley, chopped
  • 1 tbsp (15 ml) lemon juice


Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3 minutes.
  3. Stir in the minced garlic, chopped carrot, and celery, cooking for another 5 minutes.
  4. Sprinkle the flour over the vegetables and stir well to combine.
  5. Gradually pour in the seafood or vegetable stock, stirring constantly to avoid lumps.
  6. Add the bay leaf, salt, black pepper, and cayenne pepper if using, and bring to a simmer.
  7. Add the chunks of white fish to the pot and cook for 5 minutes.
  8. Stir in the shrimp and cook until both the fish and shrimp are just cooked through, about 3-4 minutes.
  9. Reduce the heat to low and slowly stir in the heavy cream.
  10. Simmer the bisque gently for another 5 minutes, allowing the flavors to meld.
  11. Remove the bay leaf and discard.
  12. Stir in the lemon juice and chopped parsley.
  13. Taste and adjust the seasoning if necessary.
  14. Serve the seafood bisque hot, garnished with additional fresh parsley if desired.
