A quick and flavorful dish that combines shrimp, zucchini, and a homemade teriyaki sauce for a light summer meal.
Ingredients
- 1 lb shrimp, peeled and deveined
- 2 medium zucchini, sliced
- 1 can water chestnuts, sliced
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1/4 cup soy sauce
- 2 tbsp honey or brown sugar
- 2 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp cornstarch
- Rice or cauliflower rice, for serving
Instructions
- In a bowl, combine soy sauce, honey (or brown sugar), rice vinegar, sesame oil, and cornstarch to make the teriyaki sauce. Set aside.
- Heat a pan over medium-high heat. Add garlic and ginger, sautéing until fragrant.
- Add shrimp and cook until they turn pink.
- Add zucchini and water chestnuts, stirring until vegetables are tender.
- Pour the teriyaki sauce over the shrimp and vegetables, stirring to coat evenly.
- Cook for an additional 2-3 minutes until the sauce thickens.
- Serve over rice or cauliflower rice for a healthier option.
