Description

A quick and flavorful dish that combines shrimp, zucchini, and a homemade teriyaki sauce for a light summer meal.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 medium zucchini, sliced
  • 1 can water chestnuts, sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1/4 cup soy sauce
  • 2 tbsp honey or brown sugar
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • Rice or cauliflower rice, for serving


Instructions

  1. In a bowl, combine soy sauce, honey (or brown sugar), rice vinegar, sesame oil, and cornstarch to make the teriyaki sauce. Set aside.
  2. Heat a pan over medium-high heat. Add garlic and ginger, sautéing until fragrant.
  3. Add shrimp and cook until they turn pink.
  4. Add zucchini and water chestnuts, stirring until vegetables are tender.
  5. Pour the teriyaki sauce over the shrimp and vegetables, stirring to coat evenly.
  6. Cook for an additional 2-3 minutes until the sauce thickens.
  7. Serve over rice or cauliflower rice for a healthier option.
