Ingredients
- Shrimp, peeled and deveined, 1 pound (454 g) (450 grams)
- Zucchini, spiralized, 2 large
- Olive oil, 2 tablespoons (30 ml) (30 milliliters)
- Beef bacon, minced, 3 slices
- Red pepper flakes, 1/4 teaspoon (1 ml) (1 gram)
- Cherry tomatoes, halved, 1 cup (240 ml) (150 grams)
- Lemon juice, 2 tablespoons (30 ml) (30 milliliters)
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped, 1/4 cup (60 ml) (15 grams)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add minced garlic and red pepper flakes to the skillet.
- Sauté for 1-2 minutes until the garlic is fragrant.
- Add shrimp to the skillet.
- Cook shrimp for 3-4 minutes, flipping halfway, until they turn pink and opaque.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add spiralized zucchini to the skillet.
- Sauté the zucchini noodles for 2-3 minutes, stirring occasionally.
- Add cherry tomatoes to the skillet.
- Cook for an additional 2 minutes until the tomatoes soften slightly.
- Return shrimp to the skillet.
- Drizzle lemon juice over the mixture in the skillet.
- Season with salt and black pepper to taste.
- Toss everything together until well combined.
- Remove from heat and sprinkle with fresh parsley.
- Serve immediately.
