Ingredients

  • Shrimp, peeled and deveined, 1 pound (454 g) (450 grams)
  • Zucchini, spiralized, 2 large
  • Olive oil, 2 tablespoons (30 ml) (30 milliliters)
  • Beef bacon, minced, 3 slices
  • Red pepper flakes, 1/4 teaspoon (1 ml) (1 gram)
  • Cherry tomatoes, halved, 1 cup (240 ml) (150 grams)
  • Lemon juice, 2 tablespoons (30 ml) (30 milliliters)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped, 1/4 cup (60 ml) (15 grams)


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add minced garlic and red pepper flakes to the skillet.
  3. Sauté for 1-2 minutes until the garlic is fragrant.
  4. Add shrimp to the skillet.
  5. Cook shrimp for 3-4 minutes, flipping halfway, until they turn pink and opaque.
  6. Remove shrimp from the skillet and set aside.
  7. In the same skillet, add the remaining 1 tablespoon of olive oil.
  8. Add spiralized zucchini to the skillet.
  9. Sauté the zucchini noodles for 2-3 minutes, stirring occasionally.
  10. Add cherry tomatoes to the skillet.
  11. Cook for an additional 2 minutes until the tomatoes soften slightly.
  12. Return shrimp to the skillet.
  13. Drizzle lemon juice over the mixture in the skillet.
  14. Season with salt and black pepper to taste.
  15. Toss everything together until well combined.
  16. Remove from heat and sprinkle with fresh parsley.
  17. Serve immediately.
