Ingredients

  • 2 tablespoons (30 ml) vegetable oil
  • 1 small onion, chopped
  • 32 oz (946 ml) beef broth, divided
  • 1/4 cup (60 ml) soy sauce
  • Sliced green onions, peanuts for toppings
  • 2 tsp (10 ml) garlic powder
  • 1 tablespoon (15 ml) ginger powder
  • 2 teaspoon (10 ml) red pepper flakes
  • 1 teaspoon (5 ml) pepper
  • 1 teaspoon (5 ml) salt
  • 1 lb (454 g) raw medium shrimp, peeled & deveined
  • 8 oz (227 g) Udon noodles
  • 1 cup (240 ml) peanut butter, creamy is fine, if you prefer. Use all-natural peanut butter for the best flavor.
  • 1 cup (240 ml) sliced cabbage, sub mushrooms, thinly sliced carrots, spinach, or other favorite veggies


Instructions

  1. Warm the vegetable oil over medium heat in a large saucepan.
  2. Incorporate the chopped onion.
  3. Sauté until the onion becomes see-through, which should take around 5 minutes.
  4. Pour in 2 cups of the beef broth, followed by soy sauce, pepper, salt, red pepper flakes, garlic powder, and ginger powder.
  5. Allow the mixture to reach a gentle boil and then take it off the heat.
  6. Introduce the uncooked shrimp, udon noodles, cabbage, peanut butter, and the rest of the beef broth. (NOTE: If your shrimp is pre-cooked, add it after the cabbage softens, just to warm it up.)
  7. Place back on the stove and heat until everything is hot, ensuring the shrimp is done and the cabbage softens, but avoid boiling.
  8. Garnish with a splash of chili oil and some fresh cilantro before serving.

  • Consider using olive oil or avocado oil instead of vegetable oil for a healthier option.
