Description

Delicious shrimp tacos featuring a blend of spices, fresh slaw, and creamy chipotle sauce, perfect for summer gatherings.


Ingredients

  • 1.5 lbs large shrimp, peeled & deveined
  • 2 tbsp olive oil (divided)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 whole lime, juiced
  • 2 cups shredded cabbage (green or purple)
  • ¼ cup cilantro, chopped
  • 2 tbsp lime juice
  • ½ cup sour cream or Greek yogurt
  • 2 tbsp mayonnaise
  • 1 whole chipotle pepper in adobo, minced
  • 12 small corn tortillas, warmed
  • 1 whole avocado, diced
  • Fresh cilantro for garnish
  • Lime wedges for serving
  • Optional: diced red onion, radishes, or cotija cheese


Instructions

  1. Dry the shrimp thoroughly, then season them with chili powder, cumin, garlic powder, paprika, salt, black pepper, and the juice of one lime.
  2. Prepare the slaw by mixing shredded cabbage, chopped cilantro, lime juice, and 1 tablespoon olive oil in a large bowl. Toss until well combined.
  3. In a separate bowl, whisk together the sour cream or Greek yogurt, mayonnaise, minced chipotle pepper, lime juice, and garlic powder to create the creamy chipotle sauce.
  4. Heat the remaining tablespoon of olive oil in a large skillet over high heat. Once hot, add the shrimp and cook for about 2-3 minutes per side or until they become opaque and slightly charred.
  5. Warm your corn tortillas in a dry skillet or microwave to make them pliable.
  6. Assemble the tacos by placing a few shrimp on each tortilla, topping with slaw and a drizzle of the creamy chipotle sauce. Add diced avocado and embellish with fresh cilantro and lime wedges.
  7. Serve immediately and enjoy your flavorful shrimp tacos!
