Ingredients
- 1.5 lbs large shrimp, peeled & deveined
- 2 tbsp olive oil (divided)
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 whole lime, juiced
- 2 cups shredded cabbage (green or purple)
- ¼ cup cilantro, chopped
- 2 tbsp lime juice
- ½ cup sour cream or Greek yogurt
- 2 tbsp mayonnaise
- 1 whole chipotle pepper in adobo, minced
- 12 small corn tortillas, warmed
- 1 whole avocado, diced
- Fresh cilantro for garnish
- Lime wedges for serving
- Optional: diced red onion, radishes, or cotija cheese
Instructions
- Dry the shrimp thoroughly, then season them with chili powder, cumin, garlic powder, paprika, salt, black pepper, and the juice of one lime.
- Prepare the slaw by mixing shredded cabbage, chopped cilantro, lime juice, and 1 tablespoon olive oil in a large bowl. Toss until well combined.
- In a separate bowl, whisk together the sour cream or Greek yogurt, mayonnaise, minced chipotle pepper, lime juice, and garlic powder to create the creamy chipotle sauce.
- Heat the remaining tablespoon of olive oil in a large skillet over high heat. Once hot, add the shrimp and cook for about 2-3 minutes per side or until they become opaque and slightly charred.
- Warm your corn tortillas in a dry skillet or microwave to make them pliable.
- Assemble the tacos by placing a few shrimp on each tortilla, topping with slaw and a drizzle of the creamy chipotle sauce. Add diced avocado and embellish with fresh cilantro and lime wedges.
- Serve immediately and enjoy your flavorful shrimp tacos!
Notes
For added flavor, consider marinating the shrimp for 15-30 minutes before cooking. Serve with a fresh green salad or refried beans for a complete meal.
