Description

A luxurious yet simple shrimp stuffed salmon dish that combines flavors and textures for a delightful dining experience.

Ingredients

  • 1 tbsp olive oil
  • 2 – 8 oz salmon fillets
  • 1 tbsp minced garlic
  • 8 oz raw shrimp, no tails
  • 1/3 cup mayonnaise
  • 1/4 cup Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat the oven to 350ºF.
  2. In a medium skillet over medium heat, heat the olive oil.
  3. When the oil is heated, add the shrimp and garlic. Stir often to prevent burning the garlic.
  4. Cook until the shrimp turns pink and opaque, then remove from heat.
  5. Stir in the mayonnaise, Parmesan cheese, and mozzarella cheese until well combined.
  6. Place the salmon fillets on a baking sheet lined with parchment paper.
  7. Using a sharp knife, cut each fillet horizontally, creating a pocket for the stuffing—but do not cut all the way through the fillet.
  8. Stuff each fillet with the shrimp mixture, saving some to add on top after baking. Sprinkle salt and pepper over each fillet.
  9. Bake for 20 minutes.
  10. Remove from the oven and add any remaining stuffing to the top of each fillet.
  11. Broil for 5 minutes or until golden brown. Serve and enjoy.

Notes

Consider adding fresh herbs like dill or parsley for added freshness. Use a large spoon to scoop the stuffing into each salmon pocket efficiently.
