Delightful shrimp stuffed mushrooms that combine tender shrimp and earthy mushrooms, with a creamy filling enhanced by garlic and lemon.
Ingredients
- 8 ounces peeled and deveined shrimp
- 8 ounces baby Bella mushrooms
- 3 ounces cream cheese
- 2 teaspoons mayo
- 1 tablespoon minced garlic
- 1 teaspoon lemon juice
- Salt and pepper to taste
- 1 tablespoon Italian breadcrumbs
- 1 tablespoon grated Parmesan cheese (optional)
- 1 tablespoon unsalted butter
Instructions
- Preheat the oven to 400℉.
- Clean the mushrooms and remove the stems.
- Bake the mushrooms upside down for 15 minutes to release moisture.
- Press the shrimp between paper towels to remove excess water.
- Heat oil in a frying pan and add the shrimp, seasoned with salt and pepper, until pink.
- Add minced garlic towards the end of cooking.
- Chop the cooked shrimp and mix in a bowl with cream cheese, mayo, lemon juice, salt, and pepper.
- Mix melted butter with Italian breadcrumbs and Parmesan cheese.
- Spoon the shrimp mixture into each mushroom cap and sprinkle with breadcrumb topping.
- Bake for 20 minutes until golden brown.
- Serve warm, garnished with fresh herbs or lemon wedges.
Notes
Chill the filling before stuffing for easier assembly. Customize the filling with additional ingredients like bell peppers or green onions.
