Description

Delightful shrimp stuffed mushrooms that combine tender shrimp and earthy mushrooms, with a creamy filling enhanced by garlic and lemon.


Ingredients

  • 8 ounces peeled and deveined shrimp
  • 8 ounces baby Bella mushrooms
  • 3 ounces cream cheese
  • 2 teaspoons mayo
  • 1 tablespoon minced garlic
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon Italian breadcrumbs
  • 1 tablespoon grated Parmesan cheese (optional)
  • 1 tablespoon unsalted butter


Instructions

  1. Preheat the oven to 400℉.
  2. Clean the mushrooms and remove the stems.
  3. Bake the mushrooms upside down for 15 minutes to release moisture.
  4. Press the shrimp between paper towels to remove excess water.
  5. Heat oil in a frying pan and add the shrimp, seasoned with salt and pepper, until pink.
  6. Add minced garlic towards the end of cooking.
  7. Chop the cooked shrimp and mix in a bowl with cream cheese, mayo, lemon juice, salt, and pepper.
  8. Mix melted butter with Italian breadcrumbs and Parmesan cheese.
  9. Spoon the shrimp mixture into each mushroom cap and sprinkle with breadcrumb topping.
  10. Bake for 20 minutes until golden brown.
  11. Serve warm, garnished with fresh herbs or lemon wedges.

Notes

Chill the filling before stuffing for easier assembly. Customize the filling with additional ingredients like bell peppers or green onions.
