  • 1 avocado

  • 30 ml vegetable oil
  • 15 ml tomato paste
  • 1-2 g salt or to taste
  • 1-2 dashes black pepper
  • 30-45 ml fresh Italian parsley finely chopped


Instructions

  1. Submerge the shrimp in boiling water and cook until they are just tender, which should take about 2-3 minutes. Drain them and rinse with cold water, ensuring they are thoroughly drained and dried with a towel.
  2. In a small bowl, combine the tomato paste with the vegetable oil.
  3. Slice the avocado in half lengthwise with a sharp knife, remove the pit, and carefully cut around the edges to create small cubes of avocado. Place the cubes in a medium bowl, add the cooled shrimp and the tomato mixture, and gently combine. Season with a pinch or two of salt and pepper.
