Description

A vibrant and flavorful shrimp stir fry featuring large shrimp, seasonal vegetables, and a delightful sauce. Perfect for busy weeknights!


Ingredients

  • 1 lb large shrimp
  • 1 bunch broccoli
  • 8 oz baby bella mushrooms
  • 8 oz snow peas
  • 1/2 cup diced green onion
  • 2 bell peppers
  • 1/2 cup soy sauce
  • 1 cup chicken broth
  • 2 tbsp rice vinegar
  • 1/4 cup honey
  • 6 garlic cloves
  • 2 tsp chili paste
  • 2 1/2 tbsp cornstarch


Instructions

  1. Heat a wok or large sauté pan over medium-high heat, adding a tablespoon of oil to coat the surface.
  2. Add the shrimp to the hot pan and stir-fry until they turn pink and opaque, about 2-3 minutes. Remove the shrimp from the pan and set them aside.
  3. In the same pan, add more oil if needed, then toss in the garlic. Sauté for about 30 seconds until fragrant.
  4. Add the broccoli, bell peppers, mushrooms, and snow peas to the pan. Stir-fry these vegetables for about 3-5 minutes until they are tender yet crisp.
  5. Return the shrimp to the pan and pour the sauce over the mixture. Stir everything to ensure an even coating. Increase the heat and simmer for another minute to thicken the sauce.
  6. Finally, sprinkle the diced green onion over the top and mix briefly.
  7. Remove from heat and serve immediately.

Notes

For best results, serve over rice or noodles. Store leftovers in an airtight container in the refrigerator for up to three days.
