Ingredients

  • – 12-15 rice paper wrappers (12-15)
  • – 1 head romaine lettuce, leaves separated and largest leaves cut in 1/2
  • – Cooked vermicelli noodles, I used about 115g (4 oz) uncooked
  • – 1 lb (454 g) cooked shrimp, shells and tails removed (full or sliced in half)
  • – 1/2 cucumber, chopped into matchsticks
  • – 1 large carrot, chopped into matchsticks
  • – 1 avocado, sliced (optional)
  • – fresh basil or mint
  • – 1/4 cup (60 ml) peanut butter
  • – 1-2 Tablespoons (23 ml) regular or light coconut milk
  • – 1 clove garlic, chopped
  • – 2 teaspoons (10 ml) fresh ginger, chopped
  • – 2 Tablespoons (30 ml) rice vinegar
  • – 2 Tablespoons (30 ml) low sodium soy sauce or coconut aminos
  • – 2 Tablespoons (30 ml) maple syrup
  • – 1-2 teaspoons (8 ml) sambal oelek


Instructions

  1. Prepare the vermicelli noodles by following the guidelines on the package. After cooking, drain them and rinse with cold water before setting them aside.
  2. To make the dipping sauce, combine the ingredients in a blender, starting with a single tablespoon of coconut milk. Blend until smooth, adjusting the consistency with more coconut milk if needed.
  3. Fill a saucepan with water and heat it gently on the stove, ensuring it doesn’t reach a boil. Once warmed, transfer the water to a bowl or dish that’s large enough to accommodate the rice paper wrappers. A pie dish works well for this purpose. Submerge each rice paper wrapper in the warm water briefly, about 15-20 seconds, until it becomes slightly pliable. Avoid soaking them too long as they may become overly soft and tear during rolling.
  4. Lay the softened wrapper on a flat surface like a plate. Place a lettuce leaf on the far left side of the wrapper. Add small portions of shrimp, carrots, cucumbers, and noodles onto the lettuce. Optionally, add a slice of avocado and some fresh herbs on top.
  5. Begin rolling the wrapper from the left side towards the right, tucking in the top and bottom edges like an envelope about halfway through the process.
  6. Repeat the above steps for each rice paper wrapper. Enjoy the spring rolls with the peanut dipping sauce on the side.

Notes

  • Ensure the lettuce leaves are thoroughly dried before placing them on the rice paper wrappers to prevent them from becoming soggy.
  • Customize the spring rolls by incorporating various herbs such as fresh basil or mint to enhance the overall flavor profile.
  • Adjust the amount of sambal oelek in the dipping sauce to tailor the level of spiciness according to your preference.
