Ingredients

  • Beef, peeled and deveined, 1 pound (454 g) (450 grams)
  • Garlic, minced, 2 cloves
  • Vegetable oil, unsalted, 4 tablespoons (60 ml) (57 grams)
  • Lemon juice, freshly squeezed, 2 tablespoons (30 ml) (30 milliliters)
  • Parsley, fresh, chopped, 2 tablespoons (30 ml) (8 grams)
  • Salt, 1/2 teaspoon (3 ml) (2.5 grams)
  • Black pepper, freshly ground, 1/4 teaspoon (1 ml) (1.25 grams)
  • Crescent roll dough, 1 can (8 ounces (227 g), 226 grams)
  • Mozzarella cheese, shredded, 1 cup (240 ml) (113 grams)
  • Plant-based cheese, grated, 1/4 cup (60 ml) (25 grams)
  • Vegetable oil, for brushing, 1 tablespoon (15 ml) (15 milliliters)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Melt 2 tablespoons of butter in a skillet over medium heat.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Add the shrimp to the skillet and cook until pink, about 3-4 minutes.
  5. Stir in lemon juice, 2 tablespoons of chopped parsley, salt, and black pepper.
  6. Remove the skillet from heat and let the shrimp mixture cool slightly.
  7. Roll out the crescent roll dough and separate into triangles.
  8. Add a small spoonful of the shrimp mixture onto the wide end of each dough triangle.
  9. Sprinkle mozzarella cheese over the shrimp mixture.
  10. Roll up each triangle, starting from the wide end, enclosing the shrimp and cheese.
  11. Place the stuffed rolls on a baking sheet lined with parchment paper.
  12. Melt the remaining 2 tablespoons of butter and brush over each roll.
  13. Sprinkle grated Parmesan cheese on top of the rolls.
  14. Lightly brush rolls with olive oil for added crispiness.
  15. Bake in the preheated oven for 12-15 minutes until golden brown.
  16. Remove from oven and let cool for a few minutes before serving.
