Description

A classic shrimp scampi pasta with garlic butter, shrimp, and asparagus, perfect for creating memorable meals.


Ingredients

  • 8 oz spaghetti or linguine
  • 1 lb shrimp, peeled and deveined
  • 1 cup asparagus, cut into pieces
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • Juice of 1 lemon
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Cook the spaghetti or linguine according to package instructions. Reserve 1/2 cup of pasta water, then drain the rest.
  2. In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the shrimp and asparagus to the skillet. Cook until the shrimp are pink and cooked through, about 3-4 minutes.
  4. Pour in the chicken broth and lemon juice. Stir to combine and let simmer for 3 minutes.
  5. Add the cooked pasta to the skillet, tossing everything together. If the pasta seems dry, add the reserved pasta water a little at a time.
  6. Season with red pepper flakes, salt, and pepper.
  7. Serve hot, garnished with fresh parsley.

Notes

For a creamier sauce, consider adding a splash of heavy cream towards the end of cooking.
