Description

A comforting Shrimp Scampi Pasta Bake combining succulent shrimp and creamy sauces, inspired by coastal evenings.


Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 lb shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes, and sauté until fragrant, about 1 minute.
  4. Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes.
  5. Pour in the heavy cream and chicken broth, and stir in the lemon juice. Bring to a simmer.
  6. Add the cooked pasta to the skillet and mix well. Stir in half of the Parmesan cheese and season with salt and pepper.
  7. Transfer the pasta mixture to a baking dish. Top with the remaining Parmesan and the mozzarella cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is golden and bubbly.
  9. Garnish with chopped parsley before serving.

Notes

For added flavor, consider including herbs like Italian seasoning or pinch of smoked paprika. Adding vegetables can enhance flavor and nutrition.
