A comforting Shrimp Scampi Pasta Bake combining succulent shrimp and creamy sauces, inspired by coastal evenings.
Ingredients
- 8 oz pasta (penne or fusilli)
- 1 lb shrimp, peeled and deveined
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes, and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes.
- Pour in the heavy cream and chicken broth, and stir in the lemon juice. Bring to a simmer.
- Add the cooked pasta to the skillet and mix well. Stir in half of the Parmesan cheese and season with salt and pepper.
- Transfer the pasta mixture to a baking dish. Top with the remaining Parmesan and the mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is golden and bubbly.
- Garnish with chopped parsley before serving.
Notes
For added flavor, consider including herbs like Italian seasoning or pinch of smoked paprika. Adding vegetables can enhance flavor and nutrition.
