Description
A comforting shrimp scampi pasta bake featuring rigatoni, shrimp, garlic, and a creamy cheese sauce.
Ingredients
- 12 oz rigatoni or penne pasta
- 1 lb shrimp, peeled and deveined
- 4 tbsp butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1/2 tsp red pepper flakes (optional)
- 1 cup shredded mozzarella cheese
- 2 tbsp chopped fresh parsley
- 1/2 cup panko breadcrumbs (optional)
Instructions
- Boil pasta until al dente, then drain and set aside.
- Season shrimp with salt and pepper, and cook in butter until pink; set aside.
- Sauté minced garlic in the same skillet, then add chicken broth and heavy cream. Stir well.
- Mix in Parmesan cheese and seasonings.
- Toss cooked pasta and shrimp in the sauce until evenly coated.
- Transfer the mixture to a baking dish, and top with shredded mozzarella and panko breadcrumbs if desired.
- Bake at 375°F (190°C) until golden brown, about 20-25 minutes.
- Garnish with chopped fresh parsley and serve warm.
Notes
Feel free to add red pepper flakes for heat and experiment with seasonal vegetables.
