Description

A comforting shrimp scampi pasta bake featuring rigatoni, shrimp, garlic, and a creamy cheese sauce.


Ingredients

  • 12 oz rigatoni or penne pasta
  • 1 lb shrimp, peeled and deveined
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley
  • 1/2 cup panko breadcrumbs (optional)


Instructions

  1. Boil pasta until al dente, then drain and set aside.
  2. Season shrimp with salt and pepper, and cook in butter until pink; set aside.
  3. Sauté minced garlic in the same skillet, then add chicken broth and heavy cream. Stir well.
  4. Mix in Parmesan cheese and seasonings.
  5. Toss cooked pasta and shrimp in the sauce until evenly coated.
  6. Transfer the mixture to a baking dish, and top with shredded mozzarella and panko breadcrumbs if desired.
  7. Bake at 375°F (190°C) until golden brown, about 20-25 minutes.
  8. Garnish with chopped fresh parsley and serve warm.

Notes

Feel free to add red pepper flakes for heat and experiment with seasonal vegetables.
