Description

A delicious shrimp scampi pasta bake that combines plump shrimp, creamy garlic sauce, and melted cheese for a comforting coastal meal.


Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 lb shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1 lemon, juiced and zested
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the garlic and sauté until fragrant.
  4. Add the shrimp and cook until pink and opaque, about 3-4 minutes.
  5. Stir in the heavy cream, broth, lemon juice, and zest. Season with salt and pepper.
  6. Combine the cooked pasta with the shrimp mixture. Transfer to a baking dish and top with mozzarella and Parmesan cheese.
  7. Bake in the preheated oven for 20-25 minutes until cheese is bubbly and golden.
  8. Garnish with fresh parsley and serve.
