Description

A delicious shrimp scampi pasta bake that combines tender shrimp and creamy pasta in a comforting dish, perfect for gatherings and cozy dinners.

Ingredients

  • 8 ounces pasta (such as penne or rotini)
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente, then drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
  5. Reduce heat to low, then stir in heavy cream, Parmesan cheese, red pepper flakes, salt, and pepper. Mix until well combined.
  6. Add the cooked pasta to the skillet and toss everything together.
  7. Transfer the mixture to a baking dish and top with shredded mozzarella cheese.
  8. Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and garnish with fresh parsley before serving.

Notes

For extra flavor, consider adding vegetables like spinach or cherry tomatoes. A squeeze of fresh lemon juice adds brightness when serving.
