Description
A comforting and indulgent shrimp scampi pasta bake with rich flavors of garlic, cream, and melted cheeses.
Ingredients
- 8 oz pasta (like penne or rotini)
- 1 lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup butter
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1/2 tsp red pepper flakes (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta according to package instructions until al dente; drain and set aside.
- In a large skillet, melt the butter over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Add shrimp, salt, pepper, and red pepper flakes (if using). Cook until shrimp are pink and cooked through, approximately 3-4 minutes.
- Stir in the heavy cream and bring to a simmer. Add Parmesan cheese and stir until melted and combined.
- Combine the pasta, shrimp mixture, and half of the mozzarella cheese; mix well.
- Pour the pasta mixture into a baking dish. Top with remaining mozzarella cheese.
- Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden.
- Remove from oven, sprinkle with fresh parsley, and serve hot.
Notes
For a crispier topping, broil the dish for the last few minutes of baking. Adjust seasonings to taste and consider adding vegetables for a variation.
