Description

A comforting and indulgent shrimp scampi pasta bake with rich flavors of garlic, cream, and melted cheeses.


Ingredients

  • 8 oz pasta (like penne or rotini)
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup butter
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp red pepper flakes (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente; drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  4. Add shrimp, salt, pepper, and red pepper flakes (if using). Cook until shrimp are pink and cooked through, approximately 3-4 minutes.
  5. Stir in the heavy cream and bring to a simmer. Add Parmesan cheese and stir until melted and combined.
  6. Combine the pasta, shrimp mixture, and half of the mozzarella cheese; mix well.
  7. Pour the pasta mixture into a baking dish. Top with remaining mozzarella cheese.
  8. Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden.
  9. Remove from oven, sprinkle with fresh parsley, and serve hot.

Notes

For a crispier topping, broil the dish for the last few minutes of baking. Adjust seasonings to taste and consider adding vegetables for a variation.
