A comforting and indulgent shrimp scampi baked pasta with creamy sauce, garlic, and rich cheeses, perfect for gatherings or cozy nights in.
Ingredients
- 8 oz pasta (penne or rigatoni)
- 1 lb shrimp, peeled and deveined
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 tsp red pepper flakes
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta according to package instructions, drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the garlic and sauté until fragrant (about 1 minute).
- Add the shrimp to the skillet and cook until they are pink and cooked through (about 3-4 minutes).
- Stir in the heavy cream, chicken broth, red pepper flakes, salt, and pepper. Bring to a simmer.
- Mix in the cooked pasta and half of the Parmesan cheese.
- Transfer the mixture to a casserole dish and top with the remaining Parmesan and mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
For deeper flavors, consider making the dish a day ahead and storing it in the fridge before baking.
