Description

A comforting and indulgent shrimp scampi baked pasta with creamy sauce, garlic, and rich cheeses, perfect for gatherings or cozy nights in.


Ingredients

  • 8 oz pasta (penne or rigatoni)
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp red pepper flakes
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions, drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the garlic and sauté until fragrant (about 1 minute).
  4. Add the shrimp to the skillet and cook until they are pink and cooked through (about 3-4 minutes).
  5. Stir in the heavy cream, chicken broth, red pepper flakes, salt, and pepper. Bring to a simmer.
  6. Mix in the cooked pasta and half of the Parmesan cheese.
  7. Transfer the mixture to a casserole dish and top with the remaining Parmesan and mozzarella cheese.
  8. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden.
  9. Garnish with fresh parsley before serving.

Notes

For deeper flavors, consider making the dish a day ahead and storing it in the fridge before baking.
