Description

A refreshing and vibrant shrimp salsa that highlights the natural sweetness of shrimp, complemented by fresh vegetables and zesty lime.


Ingredients

  • 1-2 lbs shelled and cooked shrimp (50-60 count)
  • 2 large tomatoes, chopped
  • 1 small white onion, chopped (or 2 green onions, chopped)
  • 1/2 cup cilantro, slightly chopped
  • 1/2 jalapeño, diced with seeds
  • 1 avocado, chopped
  • Tomato juice (V8)
  • Lime juice
  • Salt
  • Pepper


Instructions

  1. In a large glass bowl, combine the shrimp, chopped tomatoes, and diced onions.
  2. Add cilantro, jalapeño, and avocado to the bowl.
  3. Drizzle in lime juice and season with salt and pepper to taste.
  4. Gently stir to combine all ingredients.
  5. Pour in a splash of tomato juice to add a bit more moisture.
  6. Cover the bowl with plastic wrap and chill in the refrigerator for at least one hour before serving.

Notes

Serve with tortilla chips or on top of grilled fish or tacos. Store in an airtight container and consume within two days for freshness.
