A refreshing shrimp salad combining bright flavors, perfect for warm summer days and gatherings.
Ingredients
- 1 pound shrimp, peeled and deveined
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh herbs (parsley, cilantro, or dill), chopped
- 1/4 cup mayonnaise
- 2 tablespoons Greek yogurt
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a medium bowl, combine mayonnaise, Greek yogurt, lemon juice, salt, and pepper to make the dressing.
- In another bowl, mix shrimp, salad greens, cherry tomatoes, cucumber, red onion, and herbs.
- Pour the dressing over the shrimp and vegetables, tossing gently to combine.
- Serve immediately in lettuce cups, over additional greens, or alongside crusty bread.

Consider using pre-cooked shrimp for quicker preparation. Customize herbs and vegetables as desired.
