Description

A refreshing shrimp salad combining bright flavors, perfect for warm summer days and gatherings.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh herbs (parsley, cilantro, or dill), chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. In a medium bowl, combine mayonnaise, Greek yogurt, lemon juice, salt, and pepper to make the dressing.
  2. In another bowl, mix shrimp, salad greens, cherry tomatoes, cucumber, red onion, and herbs.
  3. Pour the dressing over the shrimp and vegetables, tossing gently to combine.
  4. Serve immediately in lettuce cups, over additional greens, or alongside crusty bread.
