Description

A refreshing and vibrant shrimp salad that combines fresh ingredients with a zesty dressing, perfect for summer picnics or potlucks.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 cup celery, chopped
  • 1/2 cup red onion, chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a pot of boiling salted water, cook the shrimp until they turn pink (about 2-3 minutes) and then drain them.
  2. In a large bowl, mix mayonnaise, lemon juice, minced garlic, and salt and pepper to taste to create the dressing.
  3. Add in the cooked shrimp, celery, red onion, and fresh dill.
  4. Toss everything together gently until well combined.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For added flavor, consider using Old Bay seasoning in the boiling water. Experimenting with fresh herbs can also enhance the dish.
