Ingredients
- 1 pound of shrimp, peeled and deveined
- 2 tablespoons of fresh dill, chopped
- 1/4 cup of mayonnaise
- 1 tablespoon of lemon juice
- 1 teaspoon of Dijon mustard
- Salt and pepper to taste
- Lettuce leaves for serving
Instructions
- In a pot of boiling salted water, cook shrimp until pink, about 2-3 minutes. Drain and let cool.
- In a bowl, mix together the mayonnaise, lemon juice, and Dijon mustard, seasoning with salt and pepper.
- Add the cooled shrimp and chopped dill to the dressing and stir to combine.
- Serve the shrimp salad over lettuce leaves.
Notes
For a lighter salad, consider using Greek yogurt instead of mayonnaise. Chill the ingredients for a refreshing touch.
