Ingredients

  • 7 prawns (150g)
  • 1/2 cup jasmine rice (120g)
  • 1/4 cup pickled onions (60ml)
  • 1/4 cup shredded carrots (30g)
  • 1/4 cup cucumber (40g)
  • 1 tbsp (15 ml) fresh cilantro
  • 1 tbsp (15 ml) fresh parsley
  • 1 tbsp (15 ml) olive oil
  • 1/2 tsp (3 ml) salt, pepper
  • Spicy Mayo:
  • 1/4 cup mayonnaise (60ml)
  • 1 1/2 tbsp (23 ml) chili sauce
  • 1/2 lemon, juiced
  • 1 tsp (5 ml) honey
  • 1/4 tsp (1 ml) salt


Instructions

  1. Heat a pan and add olive oil to it; once hot, introduce the prawns and season with salt and pepper, cooking until they are thoroughly done.
  2. Follow the instructions to prepare the jasmine rice. *Frozen rice was reheated for convenience!
  3. To create the spicy mayo, mix mayonnaise, chili sauce, honey, lemon juice, and salt in a small bowl. Stir until well blended and put aside.
  4. In a bowl, layer jasmine rice, shredded carrots, cucumber, pickled onions, and the sautéed prawns.
  5. Garnish with chopped cilantro and parsley.
  6. Pour the spicy mayo sauce over the top.
  7. Savor your meal!
