Description

A quick and customizable shrimp rice bowl featuring succulent shrimp, fluffy rice, and vibrant fresh vegetables, topped with a zesty spicy mayo.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked rice
  • 1 cup fresh vegetables (e.g., bell peppers, carrots, cucumbers)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha or other hot sauce
  • 1 teaspoon lime juice

Instructions

  1. In a bowl, combine shrimp with olive oil, garlic powder, paprika, salt, and pepper. Mix well.
  2. Heat a skillet over medium-high heat and sauté the seasoned shrimp until cooked through, about 3-4 minutes.
  3. In a small bowl, whisk together mayonnaise, sriracha, and lime juice to make the spicy mayo.
  4. Serve the cooked shrimp over a bed of fluffy rice, topped with fresh vegetables.
  5. Drizzle with the spicy mayo sauce and enjoy!

Notes

For extra flavor, sauté the vegetables alongside the shrimp for a minute or two. Adjust the spice level of the mayo to your liking.
