A refreshing and vibrant dish combining succulent shrimp, warm rice, and zesty pineapple salsa, perfect for weeknight dinners.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 cups cooked white or brown rice
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup fresh pineapple, diced
- ¼ cup red onion, finely chopped
- 1 jalapeño pepper, chopped (optional for extra heat)
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- Lime wedges for garnish
Instructions
- Cook the white or brown rice according to package instructions. Fluff with a fork and set aside.
- Combine shrimp, olive oil, garlic powder, paprika, salt, and pepper in a large bowl. Toss to coat the shrimp evenly.
- Heat a skillet over medium-high heat. Add the seasoned shrimp and sauté for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.
- Mix the diced pineapple, red onion, jalapeño (if using), cilantro, and lime juice in a separate bowl. Season with salt as needed.
- Divide the cooked rice among serving bowls. Top each with the sautéed shrimp and a scoop of pineapple salsa.
- Squeeze lime juice over the bowls for an extra kick and add lime wedges on the side.
