Description

A refreshing and vibrant dish combining succulent shrimp, warm rice, and zesty pineapple salsa, perfect for weeknight dinners.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 cups cooked white or brown rice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup fresh pineapple, diced
  • ¼ cup red onion, finely chopped
  • 1 jalapeño pepper, chopped (optional for extra heat)
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Lime wedges for garnish


Instructions

  1. Cook the white or brown rice according to package instructions. Fluff with a fork and set aside.
  2. Combine shrimp, olive oil, garlic powder, paprika, salt, and pepper in a large bowl. Toss to coat the shrimp evenly.
  3. Heat a skillet over medium-high heat. Add the seasoned shrimp and sauté for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.
  4. Mix the diced pineapple, red onion, jalapeño (if using), cilantro, and lime juice in a separate bowl. Season with salt as needed.
  5. Divide the cooked rice among serving bowls. Top each with the sautéed shrimp and a scoop of pineapple salsa.
  6. Squeeze lime juice over the bowls for an extra kick and add lime wedges on the side.

Notes
