Ingredients
- 1 pound (454 g) shrimp, peeled and deveined (450 grams)
- 1 tablespoon (15 ml) olive oil (15 milliliters)
- 1 teaspoon (5 ml) ground cumin (2 grams)
- 1 teaspoon (5 ml) paprika (2 grams)
- 1 teaspoon (5 ml) garlic powder (2 grams)
- Salt, to taste
- Black pepper, to taste
- 8 flour tortillas
- 2 cups (480 ml) shredded cheese, such as Monterey Jack or cheddar (200 grams)
- 1/2 cup (120 ml) chopped bell peppers (75 grams)
- 1/2 cup (120 ml) chopped onions (75 grams)
- 1/4 cup (60 ml) chopped fresh cilantro (15 grams)
- 2 tablespoons (30 ml) yogurt, for serving (30 milliliters)
- Lime wedges, for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season shrimp with cumin, paprika, garlic powder, salt, and black pepper.
- Add shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add chopped bell peppers and onions.
- Sauté the vegetables for 3-4 minutes until they are tender.
- Remove the vegetables from the skillet.
- Wipe the skillet clean with a paper towel.
- Place one flour tortilla in the skillet over medium heat.
- Sprinkle a layer of shredded cheese over half of the tortilla.
- Add cooked shrimp, sautéed vegetables, and cilantro on top of the cheese.
- Sprinkle more cheese over the toppings.
- Fold the tortilla in half to cover the filling.
- Cook for 2-3 minutes on each side until the tortilla is golden and the cheese is melted.
- Remove the quesadilla from the skillet and repeat with remaining tortillas and fillings.
- Cut each quesadilla into wedges.
- Serve the quesadillas with sour cream and lime wedges.
