Ingredients
- 1 lb. pasta (454 g)
- 4 tablespoons butter (56 g)
- 1 large shallot, minced
- 4 cloves garlic, minced
- 1 tablespoon (15 ml) fresh sage, finely chopped
- 1 1/4 cup (300 ml) pumpkin puree
- 1/3 cup flour (40 g)
- 2 1/2 cups milk (590 ml)
- 3/4 cup heavy cream (180 ml)
- 1/4 teaspoon (1 ml) ground nutmeg
- 2 teaspoons (10 ml) vegetable bouillon powder
- 1 teaspoon (5 ml) ground pepper
- 2 cups (480 ml) beef cheese, grated
- 1 cup (240 ml) Parmesan cheese, grated
Instructions
- Fill a large pot with salted water and heat until it boils vigorously. Follow the package directions to cook the pasta, then drain it. Toss the pasta with a tablespoon of olive oil to prevent it from sticking as you prepare the sauce.
- Using the same pot, melt the butter over medium heat. Add the minced shallot, garlic, and chopped sage, stirring until the mixture becomes golden-brown, approximately 3-4 minutes.
- Incorporate the pumpkin puree and flour, stirring for about one minute. Slowly mix in the milk, then the heavy cream, blending until smooth.
- Add the ground nutmeg, vegetable bouillon powder, and ground pepper to the sauce. Allow it to simmer on low for 5 minutes until it begins to thicken.
- Blend in the grated beef cheese and Parmesan cheese, stirring until completely melted and smooth. Let the sauce simmer for an additional 2-3 minutes, stirring now and then. Adjust seasoning with extra salt and pepper if needed.
- If the sauce is thicker than desired, gradually add milk, a few tablespoons at a time, until it reaches the preferred consistency.
- Return the pasta to the pot, ensuring it is well-coated with the cheese sauce.
