Ingredients
- 454 g package rigatoni pasta
- 1 tbsp vegetable oil
- 1 onion, sliced
- 3 cloves garlic, crushed
- 1 small zucchini, sliced
- 1 small yellow squash, sliced
- 1 green bell pepper, sliced
- 1 (227 g) package sliced fresh mushrooms
- 1 (794 g) can crushed tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 2 pounds shrimp, peeled and deveined
Instructions
- Fill a large pot with water and a pinch of salt, then bring it to a boil. Add the rigatoni and cook, stirring now and then, until it reaches an al dente texture, roughly 13 minutes. Drain the pasta.
- Warm vegetable oil in a pan over medium heat. Sauté the onion and garlic, stirring, until the onion becomes soft, approximately 5 minutes. Introduce the zucchini, yellow squash, green bell pepper, and mushrooms to the pan; continue to cook and stir until the vegetables soften, around 5 more minutes.
- Add the crushed tomatoes to the pan and season with oregano, basil, red pepper flakes, salt, and black pepper; let it simmer.
- Simmer the shrimp in the vegetable-tomato mixture until they turn bright pink and are opaque in the center, about 5 minutes. Arrange the shrimp and sauce atop the rigatoni for serving.
