Ingredients

  • 1 pound (454 g) shrimp, peeled and deveined (450 grams)
  • 2 tablespoons (30 ml) olive oil (30 milliliters)
  • 1 cup (240 ml) diced onion (150 grams)
  • 1 cup (240 ml) diced carrots (130 grams)
  • 1 cup (240 ml) peas (150 grams)
  • 1 cup (240 ml) diced celery (125 grams)
  • 2 cloves garlic, minced
  • 4 tablespoons (60 ml) unsalted butter (57 grams)
  • 1/3 cup (80 ml) all-purpose flour (40 grams)
  • 2 cups (480 ml) chicken broth (480 milliliters)
  • 1 cup (240 ml) milk (240 milliliters)
  • 1 teaspoon (5 ml) salt (5 grams)
  • 1/2 teaspoon (3 ml) black pepper (1 gram)
  • 1 teaspoon (5 ml) dried thyme (1 gram)
  • 1 sheet of puff pastry, thawed
  • 1 egg, beaten for egg wash


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side.
  4. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, add the remaining tablespoon of olive oil.
  6. Add the diced onion, carrots, and celery, and cook for 5 minutes until softened.
  7. Stir in the peas and minced garlic, cooking for an additional 2 minutes.
  8. Remove the vegetables from the skillet and set aside with the shrimp.
  9. In the same skillet, melt the butter over medium heat.
  10. Stir in the flour, cooking for 1-2 minutes until it forms a paste.
  11. Gradually whisk in the chicken broth and milk until smooth.
  12. Add salt, black pepper, and dried thyme, stirring until the sauce thickens.
  13. Return the shrimp and vegetables to the skillet, mixing well with the sauce.
  14. Pour the shrimp mixture into a baking dish.
  15. Roll out the puff pastry sheet on a lightly floured surface.
  16. Place the puff pastry over the baking dish, trimming excess and sealing the edges.
  17. Brush the top of the puff pastry with the beaten egg.
  18. Cut small slits in the pastry to allow steam to escape.
  19. Bake in the preheated oven for 20-25 minutes until the pastry is golden brown.
