Ingredients
- 1 pound (454 g) shrimp, peeled and deveined (450 grams)
- 2 tablespoon (30 ml) s vegetable oil (30 milliliters)
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 1 celery stalk, chopped
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) paprika (5 grams)
- 1 teaspoon (5 ml) cayenne pepper (5 grams)
- 1 teaspoon (5 ml) dried thyme (5 grams)
- 1 teaspoon (5 ml) dried oregano (5 grams)
- 1 can diced tomatoes, drained (14.5 ounce (411 g) s / 411 grams)
- 1 cup (240 ml) chicken broth (240 milliliters)
- 2 cup (480 ml) s cooked white rice (370 grams)
- Salt and pepper to taste
- 1 cup (240 ml) shredded cheddar cheese (100 grams)
- 4 cup (960 ml) s cubed French bread (200 grams)
- 2 tablespoon (30 ml) s butter, melted (30 grams)
- 2 tablespoon (30 ml) s mayonnaise (30 grams)
- 1 tablespoon (15 ml) Dijon mustard (15 grams)
- 2 tablespoon (30 ml) s chopped fresh parsley (8 grams)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
- Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil.
- Add the chopped onion, green bell pepper, and celery to the skillet.
- Sauté the vegetables until softened, about 5 minutes.
- Stir in the minced garlic, paprika, cayenne pepper, thyme, and oregano.
- Cook for 1 minute until the spices are fragrant.
- Add the drained diced tomatoes and chicken broth to the skillet.
- Bring the mixture to a simmer and cook for 5 minutes.
- Stir in the cooked rice and season with salt and pepper to taste.
- Remove the skillet from heat and gently fold in the cooked shrimp.
- Transfer the shrimp and rice mixture into a greased 9×13-inch (23×33 cm) baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top.
- In a bowl, combine the cubed French bread with melted butter, mayonnaise, and Dijon mustard.
- Toss the bread cubes until evenly coated.
- Distribute the coated bread cubes over the casserole, covering the cheese.
- Bake in the preheated oven for 20-25 minutes until the bread is golden and crispy.
- Remove the casserole from the oven and sprinkle with chopped fresh parsley.
- Let the casserole cool slightly before serving.
