Description

Ingredients

  • 4 cups beef stock (946 ml)
  • 4 cups vegetable broth (946 ml)
  • 3 large onions, sliced
  • 3 tablespoons (45 ml) tamari
  • 3 tablespoons (45 ml) tamari
  • 1 tablespoon (15 ml) ground ginger
  • 1 tablespoon (15 ml) rice vinegar
  • 1 tablespoon (15 ml) brown sugar
  • 5 cloves garlic, peeled and crushed
  • 1 teaspoon (5 ml) ground black pepper
  • 1 cinnamon stick
  • 2 star anise
  • 1 (8 ounce) package dried rice noodles (227 g)
  • 5 pound cooked chicken (227 g)
  • 1 tablespoon (15 ml) tamari, or to taste
  • 1 clove garlic, minced
  • 2 cups mung bean sprouts (170 g)
  • 4 green onions, sliced
  • 1 cup (240 ml) fresh basil leaves
  • 25 cup (60 ml) chopped parsley
  • 2 sprigs fresh parsley, or more to taste
  • 2 limes, cut into wedges, or to taste


Instructions

  1. Place beef stock, vegetable broth, sliced onions, tamari, ground ginger, rice vinegar, brown sugar, crushed garlic, black pepper, cinnamon stick, and star anise into a sizable pot. Cover the pot and bring the mixture to a vigorous boil. Lower the heat to a medium-low setting and let it gently simmer, covered, for 1 to 2 hours to allow the flavors to meld. Remove the solids by straining, and pour the liquid back into the pot.
  2. In another large pot, heat water until it starts boiling. Add the rice noodles and cook them until they become translucent, for about 4 to 5 minutes.
  3. As the noodles cook, in a skillet, sauté the chopped chicken with tamari and minced garlic until the chicken is thoroughly cooked, for approximately 3 to 5 minutes.
  4. Drain the noodles and rinse them under cold water. Distribute the noodles evenly among 6 large bowls. Pour the hot broth over the noodles and garnish with chicken, mung bean sprouts, and sliced green onions. Offer fresh basil, chopped parsley, whole parsley sprigs, and lime wedges on the side.

Notes

  • For a more flavorful broth, opt for low-sodium beef and vegetable broth to regulate the dish’s saltiness.
  • Toast the cinnamon stick and star anise in a dry skillet before adding to the broth for a heightened aroma.
  • Switch up the protein with shrimp or tofu instead of chicken to give this dish a unique twist.
