Ingredients

  • 12 ounces (340 g) penne pasta
  • 1 tablespoon (15 ml) olive oil
  • 1 pound (450 g) large shrimp, peeled and deveined
  • 1 (8 ounce (227 g)) package sugar snap peas, washed and cut in 1/2-inch (1.25 cm) pieces
  • 1 (8 ounce (227 g)) container refrigerated prepared basil sauce
  • 1 lemon


Instructions

  1. Fill a large pot with water, add a pinch of salt, and bring to a boil. Introduce the penne, stirring now and then, and cook until it is al dente, roughly 11 minutes. Save 1/2 cup of the pasta water before draining; keep it aside.
  2. At the same time, warm the oil in a big pan over medium-high heat. Place the shrimp in the pan and let them cook for 2 minutes without moving them. Add the snap peas and stir until the shrimp are just turning opaque. Mix in the pesto and the cooked penne until everything is well blended.
  3. Incorporate 1 teaspoon of lemon zest and the lemon’s juice into the pasta, tossing to mix well. Use the reserved pasta water to adjust the thickness as needed. Serve right away.

  • For a healthier choice, opt for whole wheat penne pasta over regular penne.
  • Add red pepper flakes for a spicy kick to the dish.
