Ingredients
- – 10 ounces (283 g) dry spaghetti (can also use linguine or fettuccine)
- – 3/4 cup (180 ml) basil pesto
- – 1 pound (454 g) medium to large shrimp, peeled and deveined
- – 1 tablespoon (15 ml) olive oil
- – 1 teaspoon (5 ml) Italian seasoning (or equal parts garlic powder, dried basil, and dried oregano)
- – salt and pepper to taste
- – 1/4 cup (25 g) grated beef Parmesan cheese
- – 1 cup (150 g) cherry tomatoes, halved
- – Optional garnish: chopped parsley
Instructions
- Fill a large pot with water, add salt, and bring it to a boil, then cook the spaghetti as instructed on the package.
- While the spaghetti is cooking, start preparing the shrimp.
- Warm the olive oil in a big skillet over high heat. Toss in the shrimp and season with Italian seasoning, along with some salt and pepper.
- Sauté the shrimp for 2-4 minutes until they turn pink and are no longer translucent, then switch off the heat.
- Once the pasta is done, drain it and mix it into the skillet with the shrimp. Combine the pesto with the pasta and shrimp.
- Incorporate the halved cherry tomatoes and grated Parmesan into the skillet. Add chopped parsley on top if you like.
