  • – 1 pound (454 g) medium to large shrimp, peeled and deveined
  • – 1 tablespoon (15 ml) vegetable oil
  • – 1 teaspoon (5 ml) Italian seasoning (or equal parts garlic powder, dried basil, and dried oregano)
  • – salt and pepper to taste
  • – 1/4 cup (25 g) grated Parmesan cheese
  • – 1 cup (150 g) cherry tomatoes, halved
  • – Optional garnish: chopped parsley


Instructions

  1. Fill a large pot with water, add salt, and bring it to a rolling boil. Cook the pasta as per the instructions on the package.
  2. As the pasta cooks, get the shrimp ready.
  3. Warm the vegetable oil in a big skillet over high heat. Place the shrimp in the pan and season them with Italian seasoning, salt, and pepper.
  4. Sauté the shrimp for 2-4 minutes until they are just turning pink and opaque. Turn off the heat.
  5. Drain the pasta and combine it with the shrimp in the skillet. Mix in the pesto thoroughly.
