Ingredients
- – 10 ounces (283 g) dry spaghetti (can also use linguine or fettuccine)
- – 3/4 cup (180 ml) basil pesto
- – 1 pound (454 g) medium to large shrimp, peeled and deveined
- – 1 tablespoon (15 ml) vegetable oil
- – 1 teaspoon (5 ml) Italian seasoning (or equal parts garlic powder, dried basil, and dried oregano)
- – salt and pepper to taste
- – 1/4 cup (25 g) grated Parmesan cheese
- – 1 cup (150 g) cherry tomatoes, halved
- – Optional garnish: chopped parsley
Instructions
- Fill a large pot with water, add salt, and bring it to a rolling boil. Cook the pasta as per the instructions on the package.
- As the pasta cooks, get the shrimp ready.
- Warm the vegetable oil in a big skillet over high heat. Place the shrimp in the pan and season them with Italian seasoning, salt, and pepper.
- Sauté the shrimp for 2-4 minutes until they are just turning pink and opaque. Turn off the heat.
- Drain the pasta and combine it with the shrimp in the skillet. Mix in the pesto thoroughly.
- Incorporate the cherry tomatoes and grated Parmesan into the skillet. Optionally, sprinkle with chopped parsley before serving.
