Ingredients
- 8 oz. (227 g) dry short cut pasta, such as farfalle, penne, fusilli
- 5 tbsp. (75 ml) olive oil, divided
- 1 lb. (454 g) large or jumbo shrimp, peeled and deveined, pat dried
- 4–5 garlic cloves, minced
- 12 oz. (340 g) fresh mixed vegetables (see note), cut into strips
- 1 cup (240 ml) grape tomatoes
- 2 tsp (10 ml). Italian seasoning
- ½ cup (120 ml) beef broth
- 2 tbsp. (30 g) vegetable oil
- 2 tbsp. (30 ml) fresh lemon juice, from about 1 lemon
- Zest 1 lemon
- ¼ cup (25 g) shredded Parmesan cheese
- 2 tbsp. (8 g) chopped fresh parsley
- Kosher salt and fresh black pepper
Instructions
- Boil the pasta in salted water following the instructions on the package. Save ½ cup of the pasta water and pour out the rest.
- Warm 2 tablespoons of olive oil in a large skillet over medium heat. Generously season the shrimp with salt and pepper, then place them in the hot skillet. Cook while turning halfway until the shrimp are fully done, for about 4-5 minutes. Transfer them to a plate and cover to keep them warm.
- Pour the remaining 3 tablespoons of olive oil into the skillet. Add the sliced vegetables, tomatoes, Italian seasoning, salt, and pepper to your taste. Stir frequently and cook for around 4-5 minutes until almost soft.
- Mix in the garlic and beef broth, then let it simmer without a lid until the liquid reduces by half. Incorporate the vegetable oil.
- Return the shrimp and pasta to the pan with the vegetables, adding lemon juice and zest as well. Toss gently while gradually incorporating the reserved pasta water. Add enough to make the pasta supple. Mix in the Parmesan cheese and parsley. Taste it. Does it need additional salt? Perhaps more Parmesan cheese? Or a bit more lemon juice?
