Description

A delightful dish combining succulent shrimp and orzo pasta in a vibrant lemon garlic sauce, perfect for a family dinner or quick weeknight meal.

Ingredients

  • 1 cup orzo pasta
  • 1 lb medium shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the orzo: Bring salted water to a boil in a pot. Add the orzo and cook until al dente, approximately 8-10 minutes. Reserve 1/2 cup of the pasta water before draining.
  2. Sauté shrimp: In a skillet over medium heat, warm the olive oil. Add the shrimp and cook for 3 minutes on each side until they turn pink and opaque. Season with salt and pepper.
  3. Add garlic: Stir in the minced garlic and sauté for 1 minute, just until fragrant.
  4. Create sauce: Pour the lemon juice and chicken broth into the skillet. Let it simmer briefly to combine the flavors.
  5. Combine orzo: Transfer the drained orzo into the skillet, stirring gently to coat with the sauce. If necessary, add some reserved pasta water to reach your desired consistency.
  6. Finish: Garnish the dish with chopped parsley before serving.

Notes

For added flavor, consider using freshly squeezed lemon juice and adjusting the seasoning with salt and pepper to taste.
