Ingredients
- 1 cup orzo pasta
- 1 lb medium shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 1 cup low-sodium chicken broth
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh parsley, chopped
Instructions
- Cook the orzo: Bring salted water to a boil in a pot. Add the orzo and cook until al dente, approximately 8-10 minutes. Reserve 1/2 cup of the pasta water before draining.
- Sauté shrimp: In a skillet over medium heat, warm the olive oil. Add the shrimp and cook for 3 minutes on each side until they turn pink and opaque. Season with salt and pepper.
- Add garlic: Stir in the minced garlic and sauté for 1 minute, just until fragrant.
- Create sauce: Pour the lemon juice and chicken broth into the skillet. Let it simmer briefly to combine the flavors.
- Combine orzo: Transfer the drained orzo into the skillet, stirring gently to coat with the sauce. If necessary, add some reserved pasta water to reach your desired consistency.
- Finish: Garnish the dish with chopped parsley before serving.
