Description
A quick and easy shrimp orzo dish with a bright lemon garlic sauce, perfect for summer nights and gatherings.
Ingredients
- 1 cup orzo pasta
- 1 lb large shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 lemon, juiced and zested
- 1/4 teaspoon red pepper flakes
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped, for garnish
Instructions
- Cook the orzo pasta according to the package directions until al dente. Drain and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the garlic and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet, season with salt and pepper, and cook until they are pink and opaque, about 2-3 minutes on each side.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, pour in the chicken broth, lemon juice, lemon zest, and red pepper flakes. Bring the mixture to a simmer.
- Add the cooked orzo to the skillet and stir to combine, allowing the orzo to absorb the flavors of the sauce for about 2 minutes.
- Return the shrimp to the skillet and sprinkle with Parmesan cheese. Stir well until the cheese is melted and everything is combined.
- Garnish with freshly chopped parsley before serving.
Notes
For a bolder flavor, add more red pepper flakes or hot sauce. Adjust seasonings as needed.
