Description

A quick and easy shrimp orzo dish with a bright lemon garlic sauce, perfect for summer nights and gatherings.


Ingredients

  • 1 cup orzo pasta
  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 lemon, juiced and zested
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped, for garnish


Instructions

  1. Cook the orzo pasta according to the package directions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and sauté until fragrant, about 1 minute.
  3. Add the shrimp to the skillet, season with salt and pepper, and cook until they are pink and opaque, about 2-3 minutes on each side.
  4. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, pour in the chicken broth, lemon juice, lemon zest, and red pepper flakes. Bring the mixture to a simmer.
  6. Add the cooked orzo to the skillet and stir to combine, allowing the orzo to absorb the flavors of the sauce for about 2 minutes.
  7. Return the shrimp to the skillet and sprinkle with Parmesan cheese. Stir well until the cheese is melted and everything is combined.
  8. Garnish with freshly chopped parsley before serving.

Notes

For a bolder flavor, add more red pepper flakes or hot sauce. Adjust seasonings as needed.
