Ingredients
- – 14.2 ounces (400 g) fresh Hokkien stir-fry noodles (or 8 oz (225 g) dry lo mein noodles or spaghetti)
- – 3 tablespoons (45 ml) hoisin sauce
- – 2 tablespoons (30 ml) reduced sodium soy sauce
- – 1 1/2 teaspoons (8 ml) sesame oil
- – ¼ cup (60 ml) reduced sodium chicken broth
- – 1 teaspoon (5 ml) cornstarch
- – 4 teaspoons (20 ml) vegetable oil divided use
- – 1 pound (450 g) medium or large shrimp, peeled and deveined
- – 2 cups (300 g) broccoli cut into small florets
- – 1 red bell pepper thinly sliced
- – ½ cup (75 g) julienned or shredded carrots
- – 2 scallions, sliced, white and green parts separated
- – 2 cloves garlic minced
- – Optional garnish: sliced scallions and sesame seeds
Instructions
- Warm up the noodles following the instructions on the package. If you’re using dry noodles, cook and drain them as per the package instructions, then set them aside.
- In a bowl, blend together the hoisin sauce, soy sauce, sesame oil, chicken broth, and cornstarch. Mix one tablespoon of this blend with the shrimp in a separate bowl. Keep the rest of the mixture aside.
- In a wok or large sauté pan, heat 2 teaspoons of oil over medium-high heat. Add the shrimp and cook until they turn opaque, around 2 minutes. Move the shrimp to a plate.
- Add the remaining 2 teaspoons of oil to the pan and introduce the broccoli. Stir continuously until the broccoli begins to char slightly, approximately 2 minutes. Pour in 2 tablespoons of water and continue to cook for another 2 minutes until the broccoli softens and the water evaporates. Add the bell pepper and carrots, sautéing for 3-4 minutes while stirring frequently, until they are crisp-tender.
- Either remove the veggies or push them to one side of the pan, then pour in the last 2 teaspoons of oil. Add the white parts of the scallions and garlic. Cook for 30 seconds until aromatic.
- Return the vegetables to the pan, stirring to combine them. Pour in the remaining sauce and cook for 1 minute. Then, add the shrimp and cooked noodles to the pan, tossing everything together until it’s all coated with the sauce and thoroughly heated. Garnish with the green parts of the scallions and sesame seeds. Serve right away.
