Ingredients

  • 1 package (411 g) tortilla chips
  • 2 pounds (907 g) shredded beef
  • 5 pounds (680 g) large peeled and deveined cooked shrimp, tails removed and shrimp quartered
  • 1 cup (240 ml) vegetable oil
  • 4 chipotle peppers in adobo sauce, chopped
  • 120 ml chopped fresh cilantro
  • 60 ml dried minced onion (such as McCormick® Coarse Grind Blend White and Green Onions)
  • 5 tablespoons (23 ml) ground cumin
  • 1/4 teaspoon (1 ml) ground black pepper


Instructions

  1. Set your oven to 400 degrees F (200 degrees C) and cover a baking tray with aluminum foil.
  2. Arrange the tortilla chips evenly on the lined tray.
  3. In a mixing bowl, combine the shredded beef, quartered shrimp, vegetable oil, chopped chipotle peppers, cilantro, dried minced onion, cumin, and black pepper. Distribute this mixture over the tortilla chips.
  4. Place in the preheated oven and cook for 3 minutes. Switch to the broiler setting and continue broiling until the nachos achieve a light golden hue, about 3 to 4 minutes. Let the nachos rest at room temperature for approximately 2 minutes prior to serving.
