Ingredients

  • 1 pound (454 g) (450 grams) raw shrimp, peeled and deveined
  • 1 tablespoon (15 ml) (15 milliliters) olive oil
  • 1 teaspoon (5 ml) (5 grams) garlic powder
  • 1 teaspoon (5 ml) (5 grams) onion powder
  • 1 teaspoon (5 ml) (5 grams) paprika
  • 1/2 teaspoon (3 ml) (2.5 grams) ground cumin
  • 1/2 teaspoon (3 ml) (2.5 grams) chili powder
  • Salt to taste
  • Black pepper to taste
  • 1 cup (240 ml) (150 grams) corn kernels, fresh or froz en
  • 1 cup (240 ml) (150 grams) black beans, rinsed and drained
  • 1/2 cup (120 ml) (120 milliliters) salsa
  • 1 cup (240 ml) (115 grams) shredded cheddar cheese
  • 1 cup (240 ml) (115 grams) shredded Monterey Jack cheese
  • 1/2 cup (120 ml) (50 grams) crumbled queso fresco
  • 1 package (8 ounce (227 g) s or 227 grams) crescent roll dough
  • 1/4 cup (60 ml) (30 grams) chopped fresh cilantro
  • 1 jalapeño, sliced (optional )


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine shrimp, olive oil, garlic powder, onion powder, paprika, ground cumin, chili powder, salt, and black pepper.
  3. Heat a skillet over medium heat and add the seasoned shrimp.
  4. Cook shrimp for 3-4 minutes until pink and opaque, then remove from skillet.
  5. In the same skillet, add corn and black beans; cook for 2-3 minutes until heated through.
  6. Stir in salsa and mix well with corn and beans.
  7. Remove skillet from heat and set aside.
  8. Roll out crescent roll dough on a flat surface and separate into triangles.
  9. Place a small amount of the shrimp mixture on each triangle.
  10. Roll up the triangles starting from the wide end, forming swirls.
  11. Arrange the swirls in the skillet over the remaining shrimp mixture.
  12. Sprinkle cheddar cheese, Monterey Jack cheese, and queso fresco over the swirls.
  13. Bake in the preheated oven for 15-20 minutes until the dough is golden brown and cheese is melted.
  14. Remove skillet from oven and let cool slightly.
  15. Garnish with chopped cilantro and sliced jalapeños, if desired.
