Ingredients
- 1 pound (454 g) (450 grams) raw shrimp, peeled and deveined
- 1 tablespoon (15 ml) (15 milliliters) olive oil
- 1 teaspoon (5 ml) (5 grams) garlic powder
- 1 teaspoon (5 ml) (5 grams) onion powder
- 1 teaspoon (5 ml) (5 grams) paprika
- 1/2 teaspoon (3 ml) (2.5 grams) ground cumin
- 1/2 teaspoon (3 ml) (2.5 grams) chili powder
- Salt to taste
- Black pepper to taste
- 1 cup (240 ml) (150 grams) corn kernels, fresh or froz en
- 1 cup (240 ml) (150 grams) black beans, rinsed and drained
- 1/2 cup (120 ml) (120 milliliters) salsa
- 1 cup (240 ml) (115 grams) shredded cheddar cheese
- 1 cup (240 ml) (115 grams) shredded Monterey Jack cheese
- 1/2 cup (120 ml) (50 grams) crumbled queso fresco
- 1 package (8 ounce (227 g) s or 227 grams) crescent roll dough
- 1/4 cup (60 ml) (30 grams) chopped fresh cilantro
- 1 jalapeño, sliced (optional )
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine shrimp, olive oil, garlic powder, onion powder, paprika, ground cumin, chili powder, salt, and black pepper.
- Heat a skillet over medium heat and add the seasoned shrimp.
- Cook shrimp for 3-4 minutes until pink and opaque, then remove from skillet.
- In the same skillet, add corn and black beans; cook for 2-3 minutes until heated through.
- Stir in salsa and mix well with corn and beans.
- Remove skillet from heat and set aside.
- Roll out crescent roll dough on a flat surface and separate into triangles.
- Place a small amount of the shrimp mixture on each triangle.
- Roll up the triangles starting from the wide end, forming swirls.
- Arrange the swirls in the skillet over the remaining shrimp mixture.
- Sprinkle cheddar cheese, Monterey Jack cheese, and queso fresco over the swirls.
- Bake in the preheated oven for 15-20 minutes until the dough is golden brown and cheese is melted.
- Remove skillet from oven and let cool slightly.
- Garnish with chopped cilantro and sliced jalapeños, if desired.
- Serve warm and enjoy.
