- 1 teaspoon (5 ml) (5 grams) onion powder
- 1 teaspoon (5 ml) (5 grams) smoked paprika
- 1/2 teaspoon (3 ml) (2.5 grams) cayenne pepper
- 1/2 teaspoon (3 ml) (2.5 grams) salt
- 1/4 teaspoon (1 ml) (1.25 grams) black pepper
- 2 cup (480 ml) s (250 grams) all-purpose flour
- 1 tablespoon (15 ml) (15 grams) baking powder
- 1/2 teaspoon (3 ml) (2.5 grams) salt
- 1/2 cup (120 ml) (115 grams) cold unsalted butter, cubed
- 1 cup (240 ml) (115 grams) shredded cheddar cheese
- 3/4 cup (180 ml) (180 milliliters) milk
- 1 cup (240 ml) (115 grams) shredded cheddar cheese for queso
- 1 tablespoon (15 ml) (15 grams) cornstarch
- 1/2 cup (120 ml) (120 milliliters) whole milk
- 1/4 cup (60 ml) (60 milliliters) sour cream
- 1 teaspoon (5 ml) (5 milliliters) hot sauce
- 2 green onions, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, combine garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper.
- Add shrimp to the bowl and drizzle with olive oil, then toss to coat evenly.
- Place the shrimp on a baking sheet and bake for 8-10 minutes until fully cooked.
- In another bowl, mix flour, baking powder, and salt.
- Cut the cold butter into the flour mixture until it resembles coarse crumbs.
- Stir in 1 cup of shredded cheddar cheese.
- Gradually add milk to the flour mixture, stirring until a dough forms.
- Roll the dough into a log and cut into 8 equal pieces.
- Shape each piece into a cone and place on a parchment-lined baking sheet.
- Bake the cones in the oven for 12-15 minutes until golden brown.
- Meanwhile, combine cornstarch and 1/2 cup of milk in a small saucepan over medium heat.
- Stir constantly until the mixture thickens slightly.
- Add 1 cup of shredded cheddar cheese to the saucepan, stirring until melted and smooth.
- Stir in sour cream and hot sauce to complete the queso.
- Remove the cones from the oven and let them cool slightly.
- Fill each cone with a portion of cooked shrimp.
- Spoon the spicy queso into the center of each cone as the core.
- Garnish with chopped green onions before serving.
