- 1 cup (115 g) shredded cheddar cheese
- 1/2 cup (120 ml) sour cream
- 1/4 cup (60 g) diced tomatoes
- 1/4 cup (30 g) chopped green onions
- 1/4 cup (30 g) chopped fresh cilantro
- 1 can (16.3 oz or 462 g) refrigerated biscuit dough
- 2 tablespoon s (30 g) unsalted butter, melted
- 2 cloves garlic, minced
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine shrimp, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Heat a skillet over medium heat and cook the shrimp until pink and opaque, about 3-4 minutes per side.
- Remove the shrimp from the skillet and chop into small pieces.
- In a mixing bowl, combine chopped shrimp, cheddar cheese, sour cream, diced tomatoes, green onions, and cilantro.
- Open the can of biscuit dough and separate the biscuits.
- Flatten each biscuit into a 4-inch (10 cm) circle.
- Spoon about 2 tablespoons of the shrimp mixture onto the center of each biscuit.
- Fold the edges of the biscuit dough over the filling and pinch to seal.
- Place stuffed biscuits seam-side down on a baking sheet.
