Ingredients

  • 1 pound (450 g) shrimp, peeled and deveined
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (5 g) chili powder
  • 1 teaspoon (5 g) cumin
  • 1/2 teaspoon (2.5 g) garlic powder
  • 1/2 teaspoon (2.5 g) onion powder
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup (115 g) shredded cheddar cheese
  • 1/2 cup (120 ml) sour cream
  • 1/4 cup (60 g) diced tomatoes
  • 1/4 cup (30 g) chopped green onions
  • 1/4 cup (30 g) chopped fresh cilantro
  • 1 can (16.3 oz or 462 g) refrigerated biscuit dough
  • 2 tablespoon s (30 g) unsalted butter, melted
  • 2 cloves garlic, minced


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine shrimp, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Heat a skillet over medium heat and cook the shrimp until pink and opaque, about 3-4 minutes per side.
  4. Remove the shrimp from the skillet and chop into small pieces.
  5. In a mixing bowl, combine chopped shrimp, cheddar cheese, sour cream, diced tomatoes, green onions, and cilantro.
  6. Open the can of biscuit dough and separate the biscuits.
  7. Flatten each biscuit into a 4-inch (10 cm) circle.
  8. Spoon about 2 tablespoons of the shrimp mixture onto the center of each biscuit.
  9. Fold the edges of the biscuit dough over the filling and pinch to seal.
  10. Place stuffed biscuits seam-side down on a baking sheet.
  11. In a small bowl, mix melted butter and minced garlic.
  12. Brush the garlic butter over the tops of the biscuits.
  13. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  14. Remove from the oven and let cool slightly before serving.
