Ingredients

  • 1 pound (454 g) shrimp, peeled and deveined (450 grams)
  • 1 tablespoon (15 ml) vegetable oil (15 milliliters)
  • 1 large mango, peeled and diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) soy sauce (15 milliliters)
  • 1 tablespoon (15 ml) soy sauce (15 milliliters)
  • 1 teaspoon (5 ml) cornstarch (5 grams)
  • 2 tablespoons (30 ml) water (30 milliliters)
  • Salt and pepper to taste
  • Cooked rice for serving


Instructions

  1. In a small bowl, mix cornstarch and water until smooth. Set aside.
  2. Heat the vegetable oil in a large pan over medium-high heat.
  3. Add the sliced onion and minced garlic to the pan. Sauté for 2 minutes until fragrant.
  4. Add the sliced red and green bell peppers to the pan. Stir-fry for 3-4 minutes until slightly softened.
  5. Add the shrimp to the pan and cook for 2-3 minutes until they start to turn pink.
  6. Stir in the diced mango and cook for another 2 minutes.
  7. Pour the soy sauce and oyster sauce into the pan. Mix well to combine.
  8. Add the cornstarch mixture to the pan, stirring constantly until the sauce thickens.
  9. Season with salt and pepper to taste.
  10. Serve the stir-fry hot over cooked rice.

  • Make sure to pat the shrimp dry before cooking to avoid excess moisture in the dish.
