Ingredients
- 1 pound (454 g) shrimp, peeled and deveined (450 grams)
- 1 tablespoon (15 ml) vegetable oil (15 milliliters)
- 1 large mango, peeled and diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon (15 ml) soy sauce (15 milliliters)
- 1 tablespoon (15 ml) soy sauce (15 milliliters)
- 1 teaspoon (5 ml) cornstarch (5 grams)
- 2 tablespoons (30 ml) water (30 milliliters)
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a small bowl, mix cornstarch and water until smooth. Set aside.
- Heat the vegetable oil in a large pan over medium-high heat.
- Add the sliced onion and minced garlic to the pan. Sauté for 2 minutes until fragrant.
- Add the sliced red and green bell peppers to the pan. Stir-fry for 3-4 minutes until slightly softened.
- Add the shrimp to the pan and cook for 2-3 minutes until they start to turn pink.
- Stir in the diced mango and cook for another 2 minutes.
- Pour the soy sauce and oyster sauce into the pan. Mix well to combine.
- Add the cornstarch mixture to the pan, stirring constantly until the sauce thickens.
- Season with salt and pepper to taste.
- Serve the stir-fry hot over cooked rice.
