Ingredients

  • 12 Mission Tostadas with Tajin
  • 1 lb (454 g) peeled, deveined, high-quality shrimp (41-50 count), tail removed
  • 1 1/4 cup (300 ml) s freshly squeezed lime juice (approx), divided
  • 1 tsp (5 ml) sea salt, divided
  • 1 cup (240 ml) diced mango or pineapple
  • 1 cup (240 ml) diced cucumber
  • 1 cup (240 ml) diced red onion
  • 1 jalepeno pepper, seeded and diced
  • 1/4 cup (60 ml) finely chopped fresh cilantro
  • 1 tbsp (15 ml) Tajin seasoning
  • 1 lime, wedges


Instructions

  1. In a 1 1/2-quart glass or stainless-steel container, mix the shrimp with 1 cup of lime juice and 1/2 teaspoon of salt. Add extra lime juice if necessary to make sure the shrimp is fully submerged, which helps it “cook” evenly. Cover and chill in the refrigerator for 3 to 3 1/2 hours, or until the shrimp is opaque all the way through and slightly firm. Drain using a colander.
  2. Combine the mango, cucumber, red onion, jalapeño, cilantro, and the remaining 1/4 cup of lime juice and salt. Mix these ingredients with the shrimp.
  3. Place the ceviche on top of the tostadas. Sprinkle with Tajin seasoning. Serve with lime wedges.
