Ingredients

  • – 4 ounces (113 g) egg noodles, dry uncooked, or ramen noodles, seasoning packets discarded, or 8 ounces (226 g) fresh egg noodles
  • – 1 tablespoon (15 ml) vegetable oil
  • – 8 ounces (226 g) medium shrimp, peeled and deveined, tails removed
  • – 4 cups (600 g) coleslaw mix or finely sliced cabbage
  • – 1/2 red bell pepper, sliced
  • – 1 teaspoon (5 ml) grated fresh ginger
  • – 2 cloves garlic, minced
  • – 3 tablespoons (45 ml) soy sauce, less sodium
  • – 1 tablespoon (15 ml) hoisin sauce
  • – 1 tablespoon (15 ml) water
  • – 1 teaspoon (5 g) brown sugar
  • – 1 teaspoon (5 ml) toasted sesame oil


Instructions

  1. Mix together the sauce components in a small bowl and put aside.
  2. Prepare the noodles following the instructions on the package. Drain thoroughly but do not wash them.
  3. While waiting, warm the oil in a large pan over medium-high heat. Sprinkle the shrimp with salt and pepper, then add them to the pan, cooking for about 2-3 minutes until they start to change color. Take them out of the pan and keep them aside.
  4. If necessary, add more oil and toss in the coleslaw mix and bell pepper. Stir-fry for 3-4 minutes until they begin to soften. Add the ginger and garlic, cooking for another 30 seconds.
  5. Return the shrimp to the pan and pour in the sauce. Continue to cook until the shrimp are fully done, roughly 2 minutes.
  6. Incorporate the noodles into the pan and mix thoroughly to combine everything.

Notes

  • Try using whole wheat or vegetable noodles for a healthier twist.
  • Add snap peas or broccoli for extra texture and nutrition.
  • Adjust soy sauce to taste, adding more for a stronger flavor or less for a milder taste.
