Ingredients
- – 4 ounces (113 g) egg noodles, dry uncooked, or ramen noodles, seasoning packets discarded, or 8 ounces (226 g) fresh egg noodles
- – 1 tablespoon (15 ml) vegetable oil
- – 8 ounces (226 g) medium shrimp, peeled and deveined, tails removed
- – 4 cups (600 g) coleslaw mix or finely sliced cabbage
- – 1/2 red bell pepper, sliced
- – 1 teaspoon (5 ml) grated fresh ginger
- – 2 cloves garlic, minced
- – 3 tablespoons (45 ml) soy sauce, less sodium
- – 1 tablespoon (15 ml) hoisin sauce
- – 1 tablespoon (15 ml) water
- – 1 teaspoon (5 g) brown sugar
- – 1 teaspoon (5 ml) toasted sesame oil
Instructions
- Mix together the sauce components in a small bowl and put aside.
- Prepare the noodles following the instructions on the package. Drain thoroughly but do not wash them.
- While waiting, warm the oil in a large pan over medium-high heat. Sprinkle the shrimp with salt and pepper, then add them to the pan, cooking for about 2-3 minutes until they start to change color. Take them out of the pan and keep them aside.
- If necessary, add more oil and toss in the coleslaw mix and bell pepper. Stir-fry for 3-4 minutes until they begin to soften. Add the ginger and garlic, cooking for another 30 seconds.
- Return the shrimp to the pan and pour in the sauce. Continue to cook until the shrimp are fully done, roughly 2 minutes.
- Incorporate the noodles into the pan and mix thoroughly to combine everything.

- Try using whole wheat or vegetable noodles for a healthier twist.
- Add snap peas or broccoli for extra texture and nutrition.
- Adjust soy sauce to taste, adding more for a stronger flavor or less for a milder taste.
