Ingredients

  • – 1 Tahini Green Goddess Dressing (240ml)
  • – 1 Persian Cucumber or 1/4 English cucumber, halved lengthwise and thinly sliced into half moons (60g)
  • – 1/2 cup cherry tomatoes, halved (120g)
  • – 2 baby bell peppers, sliced into rings
  • – 1 to 2 green onions, trimmed, whites and greens chopped
  • – 1/2 cup Basil leaves, cilantro, or parsley (15g)
  • – 8 to 10 ounces large shrimp, peeled and deveined (225-285g)
  • – Kosher salt
  • – 1/2 teaspoon garlic powder (2.5ml)
  • – 1/2 teaspoon dried oregano (2.5ml)
  • – Extra virgin olive oil
  • – 1/2 lemon
  • – 1 head butter lettuce or other artisan lettuce you like


Instructions

  1. Prepare the tahini green goddess dressing as specified in the recipe.
  2. Chop and slice the vegetables, then set them aside for later use.
  3. Dry the shrimp with a paper towel and season with kosher salt, garlic powder, and dried oregano.
  4. Warm 1 tablespoon of extra virgin olive oil in a large non-stick skillet. Cook the shrimp for 2 to 3 minutes until it turns pink and is no longer grey. Immediately squeeze lemon juice over the shrimp.
  5. Create the lettuce wrap by taking a leaf of lettuce (or two if your leaves are smaller) and layering some vegetables and herbs on it. Place 1 to 2 shrimp on top. Complete with a drizzle of the tahini green goddess dressing.
  6. Offer the lettuce wraps with extra green goddess dressing on the side.
