- – 1/2 cup cherry tomatoes, halved (120g)
- – 2 baby bell peppers, sliced into rings
- – 1 to 2 green onions, trimmed, whites and greens chopped
- – 1/2 cup Basil leaves, cilantro, or parsley (15g)
- – 8 to 10 ounces large shrimp, peeled and deveined (225-285g)
- – Kosher salt
- – 1/2 teaspoon garlic powder (2.5ml)
- – 1/2 teaspoon dried oregano (2.5ml)
- – Extra virgin olive oil
- – 1/2 lemon
- – 1 head butter lettuce or other artisan lettuce you like
Instructions
- Prepare the tahini green goddess dressing as specified in the recipe.
- Chop and slice the vegetables, then set them aside for later use.
- Dry the shrimp with a paper towel and season with kosher salt, garlic powder, and dried oregano.
- Warm 1 tablespoon of extra virgin olive oil in a large non-stick skillet. Cook the shrimp for 2 to 3 minutes until it turns pink and is no longer grey. Immediately squeeze lemon juice over the shrimp.
- Create the lettuce wrap by taking a leaf of lettuce (or two if your leaves are smaller) and layering some vegetables and herbs on it. Place 1 to 2 shrimp on top. Complete with a drizzle of the tahini green goddess dressing.
- Offer the lettuce wraps with extra green goddess dressing on the side.
Notes
- Try using parsley instead of basil for a burst of freshness in the lettuce wraps.
- Ensure the shrimp is cooked just right for a tender and juicy texture.
- Experiment with different types of artisan lettuce to enhance the wraps’ textures and flavors.
