Description

Ingredients

  • 2 tablespoons olive oil (30 ml)
  • 1 pound large prawns, peeled and deveined (450 g)
  • 1 teaspoon ground cumin (5 g)
  • 1 teaspoon chili powder (5 g)
  • 1/2 teaspoon garlic powder (2.5 g)
  • 1/4 teaspoon salt (1.5 g)
  • 1/4 teaspoon black pepper (1.5 g)
  • 2 cups shredded cheese, such as Monterey Jack or cheddar (200 g)
  • 1 cup plain yogurt (240 ml)
  • 1/2 cup chopped fresh cilantro (30 g)
  • 8 small flour tortillas (8-inch/20 cm)
  • 1 can (10 oz) tomato or vegetable enchilada sauce (295 ml)
  • 1 small onion, finely chopped
  • 1 tablespoon lime juice (15 ml)
  • 1 green bell pepper, minced (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Add the finely chopped onion and minced jalapeño (if using) to the skillet. Sauté until soft.
  4. Add the shrimp to the skillet and season with cumin, chili powder, garlic powder, salt, and black pepper.
  5. Cook the shrimp for 3-4 minutes until pink and cooked through.
  6. Remove the skillet from heat and stir in the lime juice and 1/4 cup of chopped cilantro.
  7. In a separate bowl, mix the sour cream with 1 cup of shredded cheese.
  8. Lightly grease a baking dish with the remaining tablespoon of olive oil.
  9. Spread a thin layer of enchilada sauce on the bottom of the baking dish.
  10. Place a small amount of shrimp mixture and cheese mixture in the center of each tortilla.
  11. Roll up each tortilla tightly and place seam-side down in the baking dish.
  12. Pour the remaining enchilada sauce evenly over the enchiladas.
  13. Sprinkle the remaining shredded cheese over the top of the enchiladas.
  14. Cover the baking dish with foil and bake in the preheated oven for 15 minutes.
  15. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  16. Garnish with the remaining chopped cilantro before serving.
