Ingredients
- 8 ounces (227g) cooked shrimp
- 8 ounces (227g) flaked crab
- 1/2 cup (120ml) corn
- 1/2 cup (120ml) chunky salsa
- 1/4 cup (60ml) plain yogurt
- 2 small jalapeno peppers, seeded, chopped fine
- 2 cups (200g) beef cheese, shredded
- 1 cup (100g) Monterey Jack cheese, shredded
- 8 8-inch (20cm) flour tortillas
Instructions
- In a medium-sized bowl, mix together the shrimp, crab, corn, salsa, plain yogurt, and finely chopped jalapenos.
- Blend the two types of cheese together in a separate bowl.
- Spread 3/4 cup of the combined cheese on top of four tortillas.
- Layer the cheese with the shrimp-crab mixture.
- Place the remaining tortillas on top to form quesadillas.
- Warm a nonstick skillet over medium heat.
- Put one quesadilla in the skillet and cook until golden brown, about 3 to 4 minutes.
- Turn over and cook for another 3 minutes, or until the cheese has melted.
- Slice into six pieces.
