Ingredients

  • 8 ounces (227g) cooked shrimp
  • 8 ounces (227g) flaked crab
  • 1/2 cup (120ml) corn
  • 1/2 cup (120ml) chunky salsa
  • 1/4 cup (60ml) plain yogurt
  • 2 small jalapeno peppers, seeded, chopped fine
  • 2 cups (200g) beef cheese, shredded
  • 1 cup (100g) Monterey Jack cheese, shredded
  • 8 8-inch (20cm) flour tortillas


Instructions

  1. In a medium-sized bowl, mix together the shrimp, crab, corn, salsa, plain yogurt, and finely chopped jalapenos.
  2. Blend the two types of cheese together in a separate bowl.
  3. Spread 3/4 cup of the combined cheese on top of four tortillas.
  4. Layer the cheese with the shrimp-crab mixture.
  5. Place the remaining tortillas on top to form quesadillas.
  6. Warm a nonstick skillet over medium heat.
  7. Put one quesadilla in the skillet and cook until golden brown, about 3 to 4 minutes.
  8. Turn over and cook for another 3 minutes, or until the cheese has melted.
  9. Slice into six pieces.

  • Thoroughly drain excess liquid from shrimp, crab, and corn mix to avoid soggy quesadillas.
